  • 4 fillets of salmon

  • Ingredients for potatoes:
  • 4 lbs. kerr pinks, washed, peeled, and quartered
  • Salt & Pepper
  • 2 heaping tablespoons of Sour Cream
  • 2 tablespoons of Real Butter
  • Ingredients for Creamed Spinach:
  • 1 bag fresh spinach
  • Salt & pepper
  • 1 heaping tablespoon Philadelphia garlic and herb cream cheese
  • 2 tablespoons real butter
  • Ingredients Hollaindaise sauce:
  • 3 large egg yolks
  • 1 tablespoon water
  • 250g unsalted butter, melted
  • Salt & pepper
  • Juice of 1/2 lemon

Step 1

Pre heat oven to 165 degrees fan assisted and get water boiling for potatoes. Whisk egg yolks and tablespoon of water in medium saucepan over low heat until thick and smooth. Remove from heat and drizzle butter while whisking until completely blended. Add salt and pepper to taste and lemon juice. Keep warm on back burner. Place 2 pieces of salmon on foil with salt and pepper, fold loosely, and onto a baking tray (2 pieces of foil in total for 4 pieces of salmon). Bake in oven for 12 minutes and remove while keeping warm in foil. Melt 2 tablespoons butter in frying pan and add spinach. Toss around until spinach is wilted and spoon into food processor. Add salt and pepper and pulse until thoroughly chopped. Add garlic and herb cream cheese and pulse until blended. Drain potatoes and put through potato ricer. Mix potatoes with butter, sour cream, and salt and pepper. Plate up and drizzle potatoes and salmon with hollaindaise sauce. Enjoy
