Ingredients
- 3 tablespoons white wine vinegar
- 4 large eggs
- 2 muffins (halved)
- Hollandaise sauce (warm)
- 4 slices parma ham

Preparation
Step 1
Fry parma ham, then muffins in pan.
Step 2
Put a deep saucepan of water to boil, and add vinegar. Break eggs into cups. Swirl water (vortex) and slide in an egg. Cook for 2-3 minutes and remove. Repeat with other eggs, one at a time.
Step 3
Serve halved muffins with ham, egg and then sauce.
