Easy Breakfast Pancakes

Serve with bacon for optimal flavour!

- 200g plain flour
- 1 tsp baking powder
- pinch of salt
- 3 eggs, beaten
- 150ml semi-skimmed milk
- 25g unsalted butter
- a drizzle of honey, to serve

Preparation
Step 1
Sift the flour, baking powder and salt into a large bowl. Make a well in the centre and add the eggs and milk. Mix together with a hand-held electric whisk for 2-3 mins until smooth.
Step 2
Melt the butter in a large frying pan. Spoon large tablespoons of the pancake mix into the pan (3-4 at a time) and cook for 2 mins on each side or until golden and cooked through. Remove from the pan and repeat with the remaining mixture.
Step 3
Serve with a drizzle of honey.
