Pancakes

- For 20-24 pancakes:
- 250 g flour
- 25 cl of milk
- 40 g of sugar (brown if possible)
- 2 tablespoons melted butter (about 20/25 g)
- 1 sachet of baking powder
- 1 pinch of salt
- 2 eggs

Step 1
In a bowl (or processor bowl) beat the eggs then add the sugar and salt. Mix. Add the melted butter and milk. Mix. Gradually add the flour and baking powder.
Step 2
When the mix is smooth, cover the bowl with a damp cloth and leave to settle for 1 to 2 hours. In a hot buttered pan (on medium low heat), pour the equivalent of a large tablespoon of batter per pancake and wait until small bubbles form on the surface. Flip the pancakes at this time and cook a few moments on the other side.
Step 3
Serve immediately, very hot. Pancakes are traditionally served with warm maple syrup but they are also delicious with honey, jam, milk jam, Nutella or fresh fruit. Enjoy!
