Easy Peasy Meatballs

Mildly Spicy Meatballs in a Tomato and Red Peso Sauce
- 250g fresh Beef Mince
- 4 slices of standard Bread - wholemeal makes a nice change
- 1 clove of chopped fresh Garlic or one spoon of pre-prepared
- Spice mix of choice - Peri Peri works well
- Paramesan Cheese
- 1 Jar Red Pesto
- 2 Tins of Chopped Tomatoes
- 2-3 eggs
- 1/2 a Onion looselychopped
- Sea Salt
- Pepper
- Olive Oil
- Parsley

Cream together Butter and Sugar until Light and fluffy
- 12oz butter
- 12oz caster sugar
- 12oz self raising flour

I LOVE quiche but I don't love how fatty and unhealthy they can be
- 3 baking potatoes
- 4 medium eggs
- 150 ml skimmed milk or any non-dairy liquid substitute (be careful of anything with too strong a flavour as it can be too strong)
- 2 cups grated low fat cheese (you can also use a non-dairy version of this - I did and it came out the same as regular cheese!)
- 1 cup finely diced ham
- 1 cup finely sliced spring onion, lightly fried
