Ingredients

  • 250g fresh Beef Mince
  • 4 slices of standard Bread - wholemeal makes a nice change
  • 1 clove of chopped fresh Garlic or one spoon of pre-prepared
  • Spice mix of choice - Peri Peri works well
  • Paramesan Cheese
  • 1 Jar Red Pesto
  • 2 Tins of Chopped Tomatoes
  • 2-3 eggs
  • 1/2 a Onion looselychopped
  • Sea Salt
  • Pepper
  • Olive Oil
  • Parsley

Preparation

Step 1

Using a blender blend three 4 slices of bread into fine bread crumbs and set aside.

Step 2

Break up the Beef Mince into small chunks using your hands and place into blender.

Step 3

Blend the mine until it has a smooth consistancy - don't be friad to shake the blender to ensure the mince moves whilst blending.

Step 4

Leaving the mince in the blender add the bread crumbs you made earlier and mix again. After you have done this the mince is now ready to go into a decent sized bowl.

Step 5

Now the mince is in the bowl add a small pinch of sea salt and a generous seasoning of pepper. Here is also where you add some more flavour through your choice of additional seasoning. I add roughy 2 desert spoons of pre-mixed peri peri seasoning from the supermarket and mix using you hands.

Step 6

Next I add some parmesan cheese - roughly a quarter of a cup, and mix. It would be nice nice instead of doing this to add some flaked mozzarella at this stage or skip this step and add mozzarella pearls in the centre of each meatball when forming their shape in a moment.

Step 7

Now, having added the cheese we add 1 large beaten egg to the mixture and combine. The mixture will be slightly sticky but if it is too loose add more breadcrumbs - made as indicted before.

Step 8

Now we are ready to shape. Ensuring you have a clean plate or tray ready. Break of small sections of you meat mixture ad role between your hands until a neatly packed ball shape is formed, ad plae on tray or plate. Repeat this for all of your mixture and drip or brush you meatballs in more beaten egg.

Step 9

Setting your meatballs aside. In a large pan heat up a small amount of oil on high heat and add your garlic, aproximately 1 clove or 1 tea spoon of pre-prepared should do it. After two minutes add your meatblls to the pan and cook until gently browned.

Step 10

Once the meat has browned add your onions and allow to fry for a few minutes. Now we can make the sauce. Combine the chooped tomatoes and pesto into the pan with the meatballs and onions. Adding additional pepper and roughly 1 more desert spoon of peri peri to add some more gentle spice. Allow to simminer on a low heat, covered for 20-25, or until the meatballs are thoroughly cooked through mins and serve over pasta of your choice.

The basic mix of bread crumbs, minced meat, salt and pepper will accomodate a multitude of flavors. This is one to experiement with!
