The best salad ever (also the unhealthiest)
- 4 chicken breast
- 1/2 a butternut squash
- 4 or 5 sweet potatoes
- 2 pack of pancetta
- 1 pack of mixed salad leaves
- 1 bunch of asparagus
- 1 punnet of mushrooms
- 1/2 jar sundried tomatoes
- 1/4 jar of green pesto

- 1 red kuri squash (or butternut), seeds removed and cut into wedges
- 1 teaspoon of harissa paste (I use La Phare du Cap Bon paste, but there are plenty of other brands available, or have go at making yourself!)
- 2 tablespoons of olive oil
- half a red onion, diced
- clove of garlic, minced
- glug of olive oil
- 1 tin of chickpeas, drained and rinsed
- pinch of chill flakes OR half a chilli, deseeded and finely chopped
- 1 tablespoon of tomato puree
- large bunch of spinach, stems removed and roughly chopped
- 2 tablespoons of half-fat creme fraiche OR Greek yoghurt

Heat grill to high. Place squash on a baking sheet, drizzle with 1 tbsp olive oil, season and pop under the grill
- 2 butternut squash, halved and seeded
- 2 tbsp olive oil
- 500g pack minced lamb
- 1 tbsp tomato purée
- 1 tsp ground cumin
- 100g couscous
- 100g goat's cheese or feta, crumbled

- 700ml chicken stock
- 150g pack of finely chopped smoked turkey rashers
