Julia's Delicious Vegetarian Stuffed Peppers

Peppers stuffed with a vegetable and rice mixture and topped with melted cheese
Ingredients
- 4 Peppers (Red or Yellow)
- 6 Spring Onions (Chopped)
- 1 Green Pepper (Chopped)
- 1 Tablespoon of Chilli Powder
- 1 Teaspoon of Cumin Seeds
- 50ml Tomato Passata
- 250g Flavoured Rice (Cooked)
- Handful of Grated Cheese

Preparation
Step 1
Preheat the oven to 180C/160C Fan/Gas Mark 4
Step 2
Slice the Red or Yellow Peppers in half from top to bottom, deseed
Step 3
In a pan, heat a little oil with the chilli powder and cumin seeds. Add the green pepper and cook for 3 minutes
Step 4
Add the chopped spring onions and heat for a further 2 minutes
Step 5
Mix in the rice and passata and heat for 2 minutes
Step 6
Put the mixture into the prepared peppers
Step 7
Put the peppers into a baking dish and cover with silver foil
Step 8
Heat in the oven for 30 minutes
Step 9
Take out, top with cheese and put back into the oven (uncovered) until the cheese has melted – approximately 10 minutes
You can prepare these in advance, just stop before step 9 and do that step when you are ready to serve
The amount of passata can be changed to suit how you like the texture to be
