Ingredients

  • For the dark chocolate clusters
  • 250g butter, cubed.
  • 2½ tbsp cocoa powder.
  • 150g plain chocolate.
  • 190g golden syrup.
  • 150g Rice Krispies.
  • 100g toffee popcorn
  • For the white chocolate clusters
  • 250g butter, cubed.
  • 2½ tbsp cocoa powder.
  • 200g white chocolate.
  • 190g golden syrup.
  • 150g Rice Krispies.
  • 100g toffee popcorn
  • To decorate
  • Star-shaped sequins.
  • Floristry wire (ask your florist nicely for a spare piece or order online)

Preparation

1.For the dark chocolate crispy cakes, melt the butter, cocoa, chocolate and syrup together in a large bowl in the microwave. Do this in stages, stirring in between to prevent the mixture burning. Stir the Rice Krispies and popcorn into the mixture and allow to cool and firm slightly.

2.Meanwhile repeat the same procedure for the white chocolate cakes and allow the mixture to cool.

3.Shape each mixture into palm-sized balls, packing together firmly but gently. Place on a baking sheet lined with greaseproof and chill for at least 1 hour to set.

4.To assemble the cake, melt the chocolate gently in the microwave or in a bowl set over a pan of simmering water. Using a serrated knife cut a thin slice off the bottom of a few of the cakes to make flat and even bases. Brush with melted chocolate and stick around the edge of a 25cm cake board, then in the middle to make a base for the pyramid. Allow to set for 10 minutes or so.

5.Brushing the bottom of each cake with chocolate to stick, build another slightly smaller circle around the inner edge of the first. Continue to build the cakes up this way, allowing to set in between each layer to keep everything secure.

6.To decorate, cut short lengths of the wire and stick to each sequin using a little glue. Alternatively pierce a small hole in each one, push the wire through and twist to secure. Stick the wired stars into the cake and serve.
