Gingerbread sponge cakes

Preheat the oven to 180 ° C/ gas mark 4
- 100 ml of milk
- 1 star anise
- 2-3 tbsp honey
- 25g plain flour
- 150g rye flour (or wholemeal)
- 25g potato starch
- 1 packet of baking powder
- 15g of brown sugar
- 1 tsp cinnamon
- ½ tsp allspice (or spice mix for gingerbread)
- 100g manderin marmelade (or bitter orange)
- 2 eggs
- 80g soft butter
- 1 teaspoon of salt
Gingerbread men

Put the flour, ginger and soda into a bowl and rub in the butter
- 350g plain flour
- 1-2 teaspoon ground ginger
- 1 teaspoon bicarbonate of soda
- 100g butter or margarine
- 175g soft light brown sugar
- 1 egg
- 4 tablespoons golden syrup
No pastry quiche!

- 100 g grated cheese or cheese cut into cubes
- cooked bacon or ham in cubes

- Blancmange mixture packets. (ASDA do a good deal a pack of 4 packets chocolate, vanilla, raspberry and strawberry) i use strawberry.
- 50g of cornflakes.
- granulated sugar for the blancmange mix
- Milk again for the blancmange mix
