Sponge cake with fruit

A quick and easy recipe - sponge cake filled with cream and topped with fruit

Ingredients
- For the sponge cake:
- 3 eggs
- Self raising flour
- Brown Sugar
- Margarine
- 1 teaspoon Vanilla essence
- For the cream:
- 400ml whipping cream
- 2 teaspoons vanilla essence
- 3 tablespoons brown sugar
- Topping:
- Fruit of your choice

Preparation
Step 1
Grease a cake tin and preheat the oven to 200 degrees
Step 2
Crack and beat the eggs, and weigh them - this corresponds to how much flour, sugar and margarine you use (typically around 150g)
Step 3
Put the eggs, flour, sugar, vanilla essence and margarine in a bowl and mix until even
Step 4
Place mixture into cake tin and pop into the oven for 20 minutes
Step 5
Meanwhile this is in the oven, make another batch of mixture ready to put into the oven
Step 6
When the first sponge is cooked, take out the oven and place on a cooling rack. Place your mixture into the oven for the second layer
Step 7
Whilst this is cooking, wash and cut your fruit. Place the cut fruit, a clean big bowl into the fridge, alongside with a whisk
Step 8
Take the cake out when it's down and place on a cooling rack
Step 9
Take out the big bowl from the fridge and the whisk, and pour the cream in the bowl. Put the sugar and vanilla essence in, and whisk until peak forms
Step 10
Spread cream on the bottom side of the cake, and place fruit neatly in the cream. Then place the other layer on top, spread some cream on, and place some fruit on there too.
Use a pipe to have a nice design to your cake
