  • 2 lemons
  • 250g plain flour
  • 3tbsp baking powder
  • 1tbsp vanilla extract
  • 1 pinch salt
  • 125g soft butter
  • 200g sugar
  • 2 eggs
  • 250ml yogurt

Step 1

Heat the oven to 180c gas mark 5.

Step 2

Place the paper baking cups into the muffin pan. Grate the zest and squeeze the juice of one lemon. Cut zest strips from the other lemon and squeeze the juice. Reserve the strips for decoration.

Step 3

Mix the flour, baking powder, vanilla extract, grated lemon zest and salt in a mixing bowl. Beat the butter and sugar in another bowl until creamy. Beat in the lemon juice, eggs and yogurt. Pour the egg mixture into the dry ingredients and beat quickly until the dry ingredients are moist. spoon the dough into the paper cups.

Step 4

Bake on the middle shelf for 20-25 minuets until golden brown.Take out of the pan and place on a wire rack to cool.

Step 5

To serve, decorate with strips of lemon zest.
