Garlic and Lemon Chicken Drummers

Ingredients

  • 12 chicken drumsticks
  • 1 tablespoon olive oil
  • 60g butter, melted
  • 25g flat-leaf parsley, chopped
  • 1 lemon, zest grated and juiced
  • 3 cloves garlic, finely chopped

Preparation

Step 1

Preheat oven to 200 C / Gas 6.

Step 2

Place drumsticks in a greased shallow roasting tin.

Step 3

Mix together oil and 1/4 of the melted butter. Drizzle over drumsticks. Season with salt and pepper. Toss to coat.

Step 4

Roast drumsticks for 35 to 40 minutes or until golden and cooked through. Remove from oven.

Step 5

Combine remaining butter, parsley, lemon zest, 4 tablespoons lemon juice and garlic in a bowl. Spoon over chicken. Cover. Stand for 10 minutes. Serve.
