Preparation

Step 1

you must have good poultry scissors - they are invaluable in a kitchen.

Step 2

turn the oven to 200 degrees.
cut the chicken right up the back and splay it out. Oil the whole thing and then rub in some herbs or spices - I use a mixture of chilli, lime and salt. Place on a suitable roasting dish but do not cover

Step 3

pop it in the oven and I usually pop in some baking potatoes that I start in the microwave but crisp up in the oven along with the chicken

serve with a crisp green salad and either the baked potatoes or some good crusty bread.
