Ingredients
- Spaghetti (enough for 2 people)
- 1 lemon
- Handful of flat leaf parsley
- Few tbsp Olive oil
- Salt and pepper
- Few tbsp grated Parmesan

Preparation
Step 1
Boil the kettle and fill a large saucepan and put on a medium heat, boil the spaghetti.
Step 2
While spaghetti is cooking, zest the lemon and cut in half. Roll up and finely chop the parsley and grate the Parmesan.
Step 3
Once the spaghetti is cooked, drain and let stand in the colander to steam for a minute. Then pour over the olive oil, add the lemon zest, a squeeze of lemon, the parmesan, parsley and a good pinch of salt and pepper.
You could also add some peas, ribbons of blanched courgette or cooked chicken breast to make it more of a substantial meal.
