Preparation
Step 1
Squeeze lemon juice into the vinegar and rest the cod fillets in this liquid during preparation
Step 2
Beat together the eggs and slowly pour in the flour and cornflour 3/1 along with the lemon zest, once this is combined pour in the lemonade and gently whisk this until you have a light fluffy texture try to keep as many bubbles as possible
Step 3
Transfer the fish into some flour and coat both sides to give a surface for the batter to bind to, transfer this into the batter to obtain a thick coating ensuring both sides are amply covered, transfer to a bowl of breadcrumbs and pour extra onto the surface, transfer immediately into pre heated oil at 200 degrees
Step 4
Once cooked for 15 minutes remove from the oil and place immediately onto a baking tray and toss in some salt before transferring onto kitchen roll to drain excess oil, leave to rest for 2 minutes
For an extra crispy surface apply a further layer of batter half way through the cooking process or after breadcrumbing, and feel free to transfer to an over after draining the oil to crisp out the remaining oil
