Lemon Drizzle Cake

            Ingredients
- 100g Unsalted butter
 - 250g Caster sugar
 - 3 Lrg eggs
 - 100ml Milk
 - 250g Self raising flour
 - Pinch salt
 - 1 tsp Baking powder
 - Zest of 3 lemons
 - For Drizzle
 - Icing sugar & the juice of the lemons

Preparation
Step 1
Preheat oven to Gas mark 4
Step 2
Add the eggs, milk & sugar into a bowl. Whisk until foamy
Step 3
Sift in the flour, salt & baking powder, stirring until smooth
Step 4
Add lemon zest
Step 5
Heat butter until melted, then pour in whilst stirring keeping the mixture smooth
Step 6
Pour into the cake tin and then place on the middle shelf in the oven
Step 7
Cook for about 20 - 30 mins. To check if the cake is fully cooked use a skewer to pierce through the middle. If it comes out clean and the cake is nice and golden on top, then it is cooked
Step 8
Place on a cooling tray out of the cake tin
Step 9
Once the cake is cooled make the drizzle. Do this by adding a cup full of icing sugar sieved into a bowl and slowly tbsp at a time add the lemon juice until it is at a smooth consistency
Step 10
Leave to thicken slightly then drizzle over the cake
