  • 750 g skate
  • 100 g crème fraîche
  • 2 tbsp capers
  • Sea salt
  • vinegar
  • Pepper
  • bouquet garni
  • small onion

Preparation

Step 1

Place the skate in 2 litres of salted water with vinegar, a pinch of pepper, a small onion and the bouquet garni. Heat.

Step 2

When the water starts to bubble, lower the heat and poach for 20 minutes.

Step 3

In a different saucepan, gently heat the creme fraiche, season lightly and add the capers.

Step 4

Drain the skate, remove the skin, place on a warm serving plate and drizzle with the cream sauce.
