Ingredients
- 100ml mayonnaise
- 1½ tbls capers, drained and chopped
- 1½ tbls gherkins, drained and chopped
- 1 small shallot, finely chopped
- Squeeze of lemon juice
- ¾ tbls chopped fresh parsley (½ tbls dried)
- Flaked sea salt and freshly ground black pepper

Mix together all of the ingredients in a small bowl and serve straight away or store in the fridge until needed.
Delicious, better than shop bought!
