  • 100ml mayonnaise
  • 1½ tbls capers
  • drained and chopped
  • 1½ tbls gherkins
  • drained and chopped
  • 1 small shallot
  • finely chopped
  • Squeeze of lemon juice
  • ¾ tbls chopped fresh parsley (½ tbls dried)
  • Flaked sea salt and freshly ground black pepper
