- 280g plain flour
- 150g granulated sugar
- 2 teaspoon baking powder
- orange/lemon zest
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 115g unsalted butter
- 100g currants
- 20g Glace Cherries
- 2 large eggs
- 2 tablespoons milk
- kirch or limonchello

Preparation
Step 1
Soak the currants and glace cherries in your choice of kirch (cherry liquer) or limonchello (lemon liquer)
Step 2
Whisk the flour, sugar, baking powder, zest, nutmeg and salt in a bowl. Rub the butter into the mixture until grainy and then mix in the cherries and currants until evenly mixed
Step 3
Beat the eggs and milk together and then mix into together with stage 2's results, place this into the fridge for an hour to cool
Step 4
Roll evenly 1/2 cm thick and cut with a circular pastry cutter to make the cakes
Step 5
Heat on a low heat in a buttered frying pan for 5 minutes per side until golden and cooked through, place aside and sprinkle with icing sugar to serve.
