- 6 oz self raising flour
- 6 oz sugar
- 6 oz butter
- 3 eggs

Preparation
Step 1
Put oven on to 200 centigrade
Step 2
Put all ingredients in a mixing bowl & mix together until smooth.
Do not bother with sifting/creaming etc, throw all in at once & mix.
Step 3
Divide into either;
2 round sponge tins - for a Victoria sponge
or
24 cake cases
or 12 muffin cases
Step 4
cook for approx. 15-20 minutes - depends if you have a fan oven. Aga type ovens approx. 30 minutes
Step 5
Check cooked through by inserting a knife in the centre. When blade comes out clean then it's done
Step 6
Ice with icing sugar or sift icing sugar over the top
Can double the mixture for more cakes!
Fabulous with custard for quick pud.
Ensure the butter is very soft - makes a better mixture.
