  • 150gr sugar
  • 3 eggs
  • 5 gr vanilla or 3 tbsp liquid vanilla siroop light
  • 75gr raisons
  • 150gr plain flour
  • 1/2tsp bicabonate soda
  • 1/2tsp salt 200gr grated carrots
  • 100gr roasted nuts(walnuts
  • pine or pecan)
  • For Frosting
  • ---------------
  • 200gr cream cheese low fat
  • 30gr icing sugar
  • juice of 1/2 lemon
  • For Topping
  • --------------
  • 100gr caster sugar
  • 10 walnuts

Step 1

For Cake
Except for the carrots and walnuts mix everything together, then fold in carrots and walnuts.
Spoon into cup cake forms and bake for 14mins in pre heated oven at 160C.

For Frosting
Mix everything together and add lemon juice at the end.

For Topping (optional)
Melt sugar and caramelise walnuts and decorate the cup cakes.

Use dried fruit as topping (less calories)
