Mash 3 RIPE bananas
Add 1 beaten egg and 55g melted butter .. leave mixture aside

Mix 190g plain flour
200g sugar
1 tsp baking powder
vanilla essence
1 tsp bicarbonate soda....leave mixture aside

Mix two mixture sets together
Grease 5 x 9 tin
Pour in mixture
Bake at 150 (fan) for 42 mins

Leave in tin until completely chilled
Turn out.

Danielle’s notes from experience with this recipe:
• I always use 4 or 5 bananas as I find 3 is never enough
• I use a baking loaf tin.. works well
• The time and temp are not great – I tend to bake at 170 for 50 mins.. but you need to judge the cake, just ensure it is cooked inside.
