Ingredients
- Base:
- 2oz/50g butter
- 2 tbsp golden syrup
- 5oz/150g digestive biscuits crushed
- Filling:
- 8oz/250g mascarpone cheese
- 7oz/200g fromage frais
- 2oz/50g caster sugar
- rind & juice of 2 limes
- ¼ pint/150ml double cream
- Decorate:
- 8oz/250g strawberries
- 4oz/125g blueberries

Preparation
Step 1
Melt the butter and syrup, then stir in the crushed biscuits
Step 2
Mix well and press into a greased 18cm/7" tin
Step 3
Beat the mascarpone in a bowl to soften
Step 4
Stir in the fromage frais, sugar and lime rind
Step 5
Gradually beat in the lime juice
Step 6
In another bowl whisk the cream until it forms soft peaks, then fold into the mascarpone mix
Step 7
Spoon the creamy filling on the base
Step 8
Swirl the top with the back of a spoon
Step 9
Put in the fridge for at least 3 hours to chill
Step 10
Remove from the tin and decorate with berries
