No-bake Lime and Berry Cheesecake

  • Base:
  • 2oz/50g butter
  • 2 tbsp golden syrup
  • 5oz/150g digestive biscuits crushed
  • Filling:
  • 8oz/250g mascarpone cheese
  • 7oz/200g fromage frais
  • 2oz/50g caster sugar
  • rind & juice of 2 limes
  • ¼ pint/150ml double cream
  • Decorate:
  • 8oz/250g strawberries
  • 4oz/125g blueberries

Step 1

Melt the butter and syrup, then stir in the crushed biscuits

Step 2

Mix well and press into a greased 18cm/7" tin

Step 3

Beat the mascarpone in a bowl to soften

Step 4

Stir in the fromage frais, sugar and lime rind

Step 5

Gradually beat in the lime juice

Step 6

In another bowl whisk the cream until it forms soft peaks, then fold into the mascarpone mix

Step 7

Spoon the creamy filling on the base

Step 8

Swirl the top with the back of a spoon

Step 9

Put in the fridge for at least 3 hours to chill

Step 10

Remove from the tin and decorate with berries
