  • Filling:
  • 1 tin condensed milk
  • ½ cup lemon juice
  • 1 tub smooth cream cheese
  • Rind of 1 lemon
  • Base:
  • 1 packet digestive biscuits
  • 2 tablespoons golden syrup
  • 4 tablespoons margarine

Step 1

Combine all filling ingredients and mix until smooth. You may have to use an egg beater if the cream cheese is very cold. Set aside.

Step 2

Crush biscuits until fine. Melt margarine and golden syrup in the microwave and add to crushed biscuits. Mix well. Press mixture down into a small pie dish. Add filling into the prepared pie dish.

Step 3

Bake at 160°C for 10 minutes. Add any fruit topping you like or leave plain.
