Ingredients
- 125g butter or margarine
- 225g light soft brown sugar
- 1 egg
- 150g plain flour
- 50g strong white bread flour
- 1 tspn bicarbonate of soda
- 1 tspn baking powder
- small pinch of salt
- 200g mixed milk dark and white chocolate chopped

Preparation
Step 1
preheat oven to 180 and line two baking sheets with greaseproof paper
Step 2
cream together butter and sugar until pale and smooth.
Step 3
Add egg and beat well
Step 4
Add all other ingredients (except chocolate) and stir to give a smooth slightly sticky batter
Step 5
Gently fold in chocolate
Step 6
Flour your hands and divide into 12 evenly sized balls and place on the baking sheet - flatten with the palm of your hand so that they are about 1cm thick leaving plenty of room for them to spread whilst cooking
Step 7
Bake for 10 to 12 mins unil pale golden. they will still be qite soft to the touch. remove from the oven and leave on the baking trays to cool for about 5 minutes.
Step 8
When slightly set remove from tray and place on a rack to finish cooling.
Use any combination of chocolate you like or try adding dried cranberries or other fruit for a change.
