The Best Strawberry Cheesecake
A recipe I have been making for years, A crumbly shortbread base layered with a creamy topping and finished off with fresh strawberries and a rich coulis
- 400g strawberries
- 350g shortbread
- 130g unsalted butter ( melted )
- 500g cream cheese
- 230g icing sugar
- 300ml double cream
- 1 tsp vanilla extract

Crush the shortbread until it resembles breadcrumbs, adthe melted butter a mix well.
Place this mixture into a loose bottom tin and press down firmly making sure the base is even. Place in the fridge for roughly 1 hour
Mix together the cream cheese, icing sugar and vanilla extract.
In a seperate bowl whisk the double cream until it is fairly stiff.
Fold the whipped double cream into the cheese mixture.
Now place the topping on the shortbread base and leave to set in the fridge for 4+ hours
Halve and hull the strawberries and layer on top very generously and drizzle with a fresh berry coulis
Leave to set overnight in the fridge for best results!
