  • 25 g butter
  • 50 g caster sugar
  • 100 g dark chocolate, grated
  • 2 eggs, separated
  • 1 tsp icing sugar
  • 1 tsp cocoa powder

Preparation

Step 1

Preheat oven to 200 C.
Lightly butter 6 small ramekins and dust with icing sugar.

Step 2

Put remaining butter in a bowl with chocolate, and heat over a pan of gently simmering water, stirring until chocolate melts. Remove from heat, cool slightly, then beat in egg yolks.

Step 3

Whisk egg whites until stiff, add rest of caster sugar, and whisk to glossy peaks.

Step 4

Fold in chocolate mix, divide into ramekins, leaving 1 cm at top to rise.

Step 5

Bake 8-10 mins, dust with icing sugar and cocoa powder mixed together, and serve straight away.
