Carrot Cake with Cinnamon

  • 4 eggs
  • 4 large carrots, grated
  • 350g caster sugar
  • 275g flour
  • 1 sachet of yeast
  • 1 sachet of vanilla sugar
  • 3 tsp cinnamon
  • 2 tsp ground ginger
  • 300 ml of oil

Step 1

Mix the eggs with the sugar until the mixture whitens. Add the cinnamon, ginger, oil, stirring continuously.

Step 2

Preheat the oven to 180 ° C / gas mark 4.

Step 3

Add the grated carrots to the mix. Then add the flour and baking powder. Mix well.

Step 4

Pour the mix into a non stick loaf tin (or grease and flour) and bake for 40 minutes at 180°C.
