Carrot and coriander winter soup
Ingredients
- 2 big onions, sliced
- 1 kg carrots, peeled and diced
- 150 ml chicken stock
- 75g butter
- 2 tbsp fresh coriander
- 150ml sherry (sweet)

Preparation
Step 1
Melt the butter in a pan, melt the onions in the butter and add the carrots. Mix to coat the carrots in the butter and cook on a medium heat.
Step 2
Add the sherry, salt and pepper.
Step 3
Put a lid on the pan and cook over low heat for 20-30 minutes then add the chicken stock. Leave to simmer until the carrots are soft. Check with a knife, they should not be hard in the centre.
Step 4
Add the coriander, previously chopped and remove from the heat. Then blend into a thick soup (add a little water or stock if it is too thick).
Step 5
Season again if need be before serving. You can serve with a dollop of cream in the middle a little fresh coriander on top.
