Carrot Cake In A Hurry
This delicious Carrot Cake recipe is perfect for when there is not much time to spare or when you're already hungry!
- 100g chopped walnuts
- 100g sultanas
- 340g grated carrot
- 260g self-raising flour
- 1tp baking soda
- 1 1/2 tp baking powder
- 1/2 tp salt
- 1 1/2 tp ground cinnamon
- 4 eggs
- 200g sugar
- 2tp vanilla
- 1 cup oil
- 55g butter at room temperature
- 230g cream cheese at room temperature
- 230g icing sugar
- 1tp lemon skin
- 1tp vanilla

Preheat oven to 180°C. Whisk self-raising flour, baking soda, baking powder, salt and cinnamon together.
In another bowl, whisk the eggs until light and fluffy.
Add sugar slowly while mixing, whisk until the mixture turns pale.
Add vanilla and oil slowly while mixing. Add in the flour mixture and mix well.
Add carrot and walnuts and mix.
Bake for 25min.
For frosting, beat the butter till smooth and creamy.
Add cream cheese, beat until smooth.
Sieve icing sugar in and mix. Add vanilla and lemon skin.
Add more sugar if frosting appears to be too thin.
