Peel the carrots and grate and cook on low heat with a little butter and water in a pan until they are tender.
Chop finely the tops of some carrots.
Prepare the dough: Mix the flour and bicarbonate of soda (or use self-raising flour). In another bowl, beat the eggs with milk and the carrot juice. Add the flour mixture and whisk to a smooth paste. Stir in the grated carrots, chopped tops, the compté cheese shavings and mix gently. Salt.
Oil the mould(s), pour in the batter and bake in a moderate oven for about 40 minutes (slightly longer for a large cake).
