1. Cook the quinoa and leek for 10 good minutes in water with the vegetable stock. Then leave for 5 minutes before draining. The quinoa will be soft and puffy.
2. In a bowl, beat the eggs and cream. Add salt, pepper, and add the quinoa with leeks. Sprinkle with flour, and mix with a spoon.

3. Grease muffin tins. Pour in and bake for 25 minutes at 170 °.
