Preparation
Step 1
Start by slicing the onions and fry them in a pan with 1 teaspoon of olive oil. Add the lardons when the onions are slightly golden, and brown. Remove from the heat and pour in the cream.
Step 2
In a bowl, sift the self-raising flour. Beat the eggs before adding to flour. Mix. Gradually add the cream and warm oil. Once smooth, stir in grated cheese and the cooked onions. Mix well.
Step 3
Cover and set aside for at least 2 hours in the fridge.
Step 4
Preheat the oven to 240 ° C/gas mark 9. Butter and flour the madeleine cake tins, and fill to 3/4. Bake for 6 minutes at 240 ° C (gas mark 8/9) and then 4 min at 200 ° C (gas mark 6-7).
Step 5
Remove the madeleines from the tin just out the oven and cool on a rack. Cool your cake tin and your dough between two batches.
