Mackerel Pate

Makes quite a bit so any left overs can be frozen. I serve this with fresh chunks of bread, toast or Melba toast.A bit rich but well worth it.

Ingredients
- 12 oz smoked mackerel,skinned and boned
- 6 oz butter, melted
- 4 oz double cream
- 3 tbsp lemon juice
- salt and pepper
- pinch cayenne

Preparation
Step 1
Put mackerel into a liquidizer and blend with just enough butter to make it smooth.
Step 2
Turn into a bowl and gradually add the remaining butter and lemon juice and seasoning.
Step 3
Put into serving dish, sprinkle cayenne pepper and chill
