Onion Marmalade and Mozzerella Potato Skins

These would be great as a starter or a side dish, be sure to make plenty though because you will have everyone fighting over them!!

Ingredients
- 3 Large Baking Potatoes
- Half a Jar of Onion Marmalade
- Grated Cheese

Preparation
Step 1
Preheat oven to 240C/220C Fan/Gas Mark 8
Step 2
Cut the potatoes in half lengthways, put back together, wipe off any excess starch from edges and cover in silver foil
Step 3
Repeat as many times as necessary and then place in the oven for 1 hour
Step 4
Remove from the oven, remove the silver foil, separate the 2 pieces, and place back into the oven for approximately 15 minutes (until they start to brown on top)
Step 5
Remove from the oven and leave to cool until you can handle them
Step 6
Reduce oven temperature to 200C/180C Fan/Gas Mark 6
Step 7
Scoop out the middle of each potato, leaving approximately 1/2centimetre potato all around
Step 8
Fill with onion marmalade and top with the grated cheese
Step 9
Place back into the oven for approximately 20 minutes (until the cheese has melted)
If you want to make these in advance, stop after step 7 and then continue just before you want to serve them, making sure they are heated all the way through.
