Dandelion jam

- 365 dandelions
- 1 1/2 litres of water
- 2 oranges and 2 lemons
- untreated
- 1 kilo of granulated sugar

Preparation
Step 1
Collect the flowers in bloom, wash them and remove the green part, keeping the petals only. Spread them out on a cloth and leave to dry in the sun for several hours. Put them in a preserving pan with the water and citrus fruits, washed and cut into pieces without peeling. Cook for 1 hour on low heat ensuring that all the flowers are well covered with water.
Step 2
Filter through a fine strainer, pressing to get the most of the cooking liquid. Add the sugar to this juice and cook for about 45 minutes. Check the jam is ready by placing a few drops on a cold plate. Pour into small pots, cover after cooling. Wait 24 hours before serving.
