Stuffed peppers.

perfect stuffed peppers ideal healthy food and classed as one of your 5 a day.
Ingredients
- 4 Medium sized peppers any colour
- 2 packets of flavours cous cous mix (I use ainsly harriot's mediterranean)
- 1 finely chopped medium heat chilli pepper.
- 1 finely chopped segment of garlic.
- half finely chopped onion. red or white
- bag of mixed salad for garnish.

Step 1
pre heat oven to 180 gas mark 5
Step 2
follow instructions on cous cous mix packet. leave for cous cous to soak up the water and double in size. take approx 20 seconds
Step 3
cut off tops of pepper and completely hollow out removing all seeds. stand up right on a non stick baking tray. i use a muffin tray helps keep them standing up.
Step 4
mix together cous cous with chopped onions, chilli pepper and garlic until all ingrediants mixed evenly.
Step 5
fill peppers with mixture right to the top. and cook in the oven for 10 minutes.
Step 6
after ten minutes serve with salad.
This is a perfect vegan dish but you can add extras such as any meat hollumi cheese is perfect with this even pre cooked prawns or shredded cooked crab.
