Healthy homemade thai prawn curry

Ingredients

  • curry paste:
  • 1/2 tsp ground cumin
  • 1+1/2 tsp ground coriander
  • 3 green chillies
  • 3 tsp minced root ginger
  • 4 tsp minced garlic
  • 3 lemongrass stalks finely chopped
  • bunch of fresh coriander chopped
  • zest of 1 lime
  • juice of 2 limes
  • 2 tbsp olive oil
  • Additional ingredients:
  • 4 tbsp olive oil
  • 10 baby sweetcorn
  • 1 green pepper sliced
  • 1 courgette cut into batons
  • 1 can of coconut milk
  • 3 tbsp dark soy sauce
  • 300g fresh tiger prawns

Preparation

Step 1

Either chop all the paste ingredients or use a food processor to make a smooth paste
Heat the oil in a wok and stir fry the sweetcorn, pepper and courgette until slightly softened
Stir in the prepared curry paste and coconut milk. Bring up to the boil
Turn the heat down to a simmer and reduce the consistency until a little thicker
Add the prawns and cook for 5 mins until the prawns are pink and cooked thru
Serve with a packet of soft noodles,stir fried with the soy sauce

You can use diced chicken instead of prawns, just brown this first before you fry the vegetables
Also you can use different vegetables, eg green beans and mange tout
