- double cream

Preparation
Step 1
Empty half of the digestive biscuit pack and put them into a plastic bag, tying at the end
Step 2
Take a rolling pin and hit the biscuits until they are in small pieces, like a crumble texture
Step 3
Put them into a container big enough to make a cheesecake in
Step 4
Add the cream cheese into a bowl, along with half of the double cream and stir
Step 5
Add sugar into the mixture, tasting every few spoonfuls to gauge how much more is needed
Step 6
If the mixture is too hard, add a little more double cream
Step 7
At this point, feel free to add other ingredients into the mixture e.g. chocolate chips, chocolate pieces, etc
Step 8
Empty the contents of the bowl onto the biscuit base and smooth over with a spoon
Step 9
Leave to set overnight
