  • For The Base
  • 200g Digestive Biscuits
  • 160g Galaxy Cookie Crumble Chocolate
  • For The Topping
  • 180g Galaxy Cookie Crumble Chocolate
  • 200ml double cream
  • 300g Cream Cheese
  • 3 teaspoons lime juice
  • 100g caster sugar

Step 1

Turn digestive biscuits into crumbs (as small as you like)

Step 2

Melt 160g of chocolate

Step 3

Mix the 2 and then put in to a tin (preferably one where the bottom pushes up to make it easy to get out! If its not non-stick grease with bit of margarine or butter) and put into fridge for 30 minutes to set

Step 4

Mix the double cream with the cream cheese, lime juice and sugar

Step 5

Melt the rest of the chocolate and mix in to the mixture from step 4

Step 6

You can cut up a few squares of remaining chocolate into tiny pieces and scatter over the top

Step 7

Put into the fridge and leave until ready to serve (longer the better)
