Step 1

Prepare the chocolate mousse: Melt the chocolate in a double boiler with the 100% cocoa powder and the butter. In a bowl, add the melted chocolate, 3 egg yolks, vanilla sugar and sugar.

Step 2

Beat the whites until stiff. Add to the previous mixture.

Step 3

Place the chocolate mousse in the fridge for 2-3 hours or longer if possible.

Step 4

In a charlotte cake tin, place the biscuits in the bottom and the sides, dipping them in coffee beforehand.

Step 5

Then alternate a layer of chocolate mousse and a layer of biscuits soaked in coffee. Continue until the tin is full. (Cake seen from underneath).
