Step 1

Start by pre-baking your puff pastry in a flan tin at 180 °C for 10-15 mins. Slice the onion finely and fry it gently in a frying pan with a knob of butter. When the onion starts to melt, add the diced courgette, you do not need to peel them. Cover and cook over low heat for 20 minutes, stirring occasionally.

Meanwhile, in a bowl, mix the goat cheese, creme fraiche, mustard, milk, turmeric (or curry) and herbes de provence. Add salt and pepper. When the courgettes are golden brown add them to the preparation and pour into the pre-cooked pastry. Place in the oven and bake for 30-45 minutes at 180 ° C.
