Yummy gooseberry tart

  • 1 cup of gooseberries
  • 1 shortcrust pastry
  • 80g + 80g sugar (160g total)
  • 4 tbsp crème fraîche
  • vanilla flavouring
  • 50 ml of milk
  • 60g of flour
  • 3 eggs

Step 1

Mix the gooseberries with 80g of sugar and leave for at least 2 and a half hours. The gooseberry juices will make a syrup with the sugar and they will be less sour.

Step 2

Spread out the pastry in a pie tin covered with greaseproof paper. Prick all over the base with a fork. Pour the gooseberries onto the pastry, spread evenly.

Step 3

Mix the remaining sugar with the eggs, flour, flavouring, milk, creme fraiche. Pour over the gooseberries.

Step 4

Bake in a preheated oven at 180 ° C (gas mark 4), on the middle shelf, for about 35 to 40 minutes.
