Green Leaf and Pea Soup

Place the stock, spring onions and garlic in a saucepan, season with salt and pepper and bring to the boil
- 1 litre (13/4 pints) vegetable (or chicken) stock
- 6 spring onions, trimmed and sliced
- 4 garlic cloves, peeled and crushed
- Salt and freshly ground black pepper
- 450g (1lb) peas, fresh or frozen
- 250g (9oz) watercress, rocket or spinach, or a mixture of all three, roughly chopped and large stalks removed
- 200ml (7fl oz) single cream
Creamy Pea Soup

Place the oil and diced onion into a saucepan and cook for 3 minutes
- 1 diced onion
- 1 tablespoon of oil
- 400g peas (tinned/frozen/fresh)
- 300ml stock/1 stock cube + 300ml water
- 100ml double cream
- 2 tablespoons parsley (chopped)

1. In a pressure cooker heat 1-2 tablespoons of oil
- 1 chopped onion
- Split green peas
- Salt (to taste)
- Black pepper
- 1 cube chicken Maggi
- 1 cup of rice
- 1 lemon
- Parsley (finely chopped)
- 1-2 tbsp oil
Quick Pea & Mint Soup

A super quick soup made with frozen peas, enhanced greatly by a secret ingredient!
- 1/2 tablsp olive oil
- 1medium onion
- 1 or 2 Bay leaves
- 450g frozen peas
- 2tbsps chopped fresh mint
- Grated rind of 1 lime (keeps green flavour)
- 1 tbsp of fromage frais or similar
- 1.2L water and chicken or vegetable stock (not beef)
