Quick Pea & Mint Soup

A super quick soup made with frozen peas, enhanced greatly by a secret ingredient!

Ingredients
- 1/2 tablsp olive oil
- 1medium onion
- 1 or 2 Bay leaves
- 450g frozen peas
- 2tbsps chopped fresh mint
- Grated rind of 1 lime (keeps green flavour)
- 1 tbsp of fromage frais or similar
- 1.2L water and chicken or vegetable stock (not beef)

Preparation
Step 1
Sauté onion and bay leaf over low heat.
Add stock, peas, mint.
Bring to boil
Simmer gently for 3 minutes, no more
Step 2
Remove from heat, add lime rind
Remove bay leaf
Liquidise
Step 3
Add salt and pepper to taste & serve with a dollop of fromage frais or yogurt if desired
