Quick Pea & Mint Soup


A super quick soup made with frozen peas, enhanced greatly by a secret ingredient!

  • 1/2 tablsp olive oil
  • 1medium onion
  • 1 or 2 Bay leaves
  • 450g frozen peas
  • 2tbsps chopped fresh mint
  • Grated rind of 1 lime (keeps green flavour)
  • 1 tbsp of fromage frais or similar
  • 1.2L water and chicken or vegetable stock (not beef)

Step 1

Sauté onion and bay leaf over low heat.
Add stock, peas, mint.
Bring to boil
Simmer gently for 3 minutes, no more

Step 2

Remove from heat, add lime rind
Remove bay leaf

Step 3

Add salt and pepper to taste & serve with a dollop of fromage frais or yogurt if desired
