- 2 fillets of mild white fish (I used about 350g) very finely chopped or blitzed quickly in a blender
- 3 kaffir lime leaves finely sliced
- 1/2 teaspoon very finely chopped lime peel
- 2 teaspoons red Thai curry paste
- 1 tablespoon sugar
- 1 teaspoon fish sauce
- 1/2 cup finely sliced green beans
- 1 teaspoon salt
- 1 egg

Thai Style Fish Cakes

Place the fish in a food processor and blend until smooth
- 500g white fish fillets
- 20g fresh coriander leaves
- 35g cornflour
- 2tbsp sweet chilli sauce
- 1 egg lightly whisked
- 2 spring onions, finely chopped
- 1 shallot, finely chopped
- 1 stalk lemon grass, finely chopped
- 50g green beans, finely chopped
- Vegetable oil for frying
- Lime wedges to serve

- 500 grams white fish meat (cod, haddock, hake, etc) , minced or cut into chunks
- 1 egg
- 1/2 cup Thai string beans, sliced fine
- 1 tablespoon of salt
- 3 tablespoon fresh kaffir lime leaves, minced or chopped
- 1 tablespoon of palm sugar
- 1 tablespoon of red curry paste
- 3 cups cooking oil for frying
