Thai Style Fish Cakes

Ingredients
- 500g white fish fillets
- 20g fresh coriander leaves
- 35g cornflour
- 2tbsp sweet chilli sauce
- 1 egg lightly whisked
- 2 spring onions, finely chopped
- 1 shallot, finely chopped
- 1 stalk lemon grass, finely chopped
- 50g green beans, finely chopped
- Vegetable oil for frying
- Lime wedges to serve

Preparation
Step 1
Place the fish in a food processor and blend until smooth. Add the coriander, cornflour, fish sauce, shallot, sweet chilli sauce and egg and blend until well combined.
Step 2
Transfer the fish mixture to a large bowl. Add the spring onion and green beans and stir until well combined.
Step 3
Heat the oil in a large frying pan. Divide the mixture into 8 equal portions. Shape into balls and flatten with the palm of your hand. Cook in batches of 4 until golden brown.
