- 150g self raising flour
- 150g caster sugar
- 150g butter

Step 1
Pre-heat the oven to Gas mark 4/170'C.
Step 2
Grease and line two 19cm sandwich tins.
Step 3
Cream butter and sugar until soft and fluffy.
Step 4
Add and beat in the eggs.
Step 5
Fold in the flour.
Step 6
Divide the mixture equally into the 2 tins so there is 300g in each.
Step 7
Cook for 20 minutes.
Step 8
Leave to cool on a cooling rack.
To make the sponges chocolate replace 50g of flour for 50g of cocoa powder.
