Preparation
Step 1
Wash and dry chicken.
Place in roasting tin with breast side down.
With two hands, press down on chicken back until it snaps - this will allow the chicken to "sit" in the roasting tin without toppling over.
Step 2
Pre-heat oven to gas mark 5
Step 3
Cook chicken breast side down:-
Small chicken for 45 mins then turn over and cook for a further 30 mins.
Medium chicken for 1-hour then turn over for a further 30 mins.
Large chicken for 1-1/4 hours then turn over for a further 30 mins.
Step 4
When time is up remove from oven and let it rest for 15 mins before carving.
No need to baste while cooking.
